This simple and quick recipe makes about 10 scones ๐
Ingredients
๐ธ 225g or (~1.5cups) Self – raising flour
๐ธ 1 tsp baking powder
๐ธ Pinch of salt
๐ธ 55g or (1/4cup ) Butter
๐ธ 25g or (2tbsps) caster sugar
๐ธ 120 ml or ( 1/2cup ) Milk
๐ธ 1 medium mashed banana
๐ธ 100g or (~1/2 cup) chocolate chips
๐ธ 1/2 tsp cinnamon
๐ธ 1/2 tsp vanilla
Method
๐ธPreheat oven to 400F or 200C and prepare a baking sheet.
๐ธIn a bowl add the flour, salt, baking powder and butter and rub together till itโs like breadcrumbs.
๐ธAdd the sugar, then add the chocolate chips and mix it in.
๐ธPut aside 1 tbsp of milk for glazing the scones. Stir in the rest of the milk, the mashed banana and the vanilla into the flour and mix to form a soft dough. The dough might be a bit sticky. Try not to overwork the dough.
๐ธPut the dough on a lightly floured surface, knead lightly and roll out to about 1/2 inches in thickness.
๐ธUse a cutter to cut the dough into small 3 inch circles.
๐ธPlace the scones on a baking sheet and glaze with milk. Then bake in the oven for about 15 -20 minutes till they are light golden brown. I found the banana scones needed a bit longer in the oven than the classic scones.
๐ธRemove from the baking sheet and leave to cool, then enjoy with your favourite spread and toppings.
